I wanted to do something fun for today! So I’ll keep it short and sweet or should I say DARK! (enter Star Wars theme)
It’s May the 4th and my husband and the little gingers are all really into star wars so it’s only fitting that I should do something Star Wars themed. I decided on a smoothie after my little guy said he wanted one that looked like the ‘red light sabre’ I personally loved the idea and was glad he kept it simple and didn’t ask me to make him a character star wars cake.
The only problem was I needed something that would get the colour really red, berries are good but it always ends up a bit too pink and the little guy was adamant it had to be light sabre red so I went to the drawing board/fridge … something red hummmmm. Beets! Beets haven’t always been my favourite but after finding out how much of nutritional power house they are I couldn’t resist adding them to our weekly shopping list. They contain potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates, protein, antioxidants and soluble fibre, that’s a lot of good stuff! By the way if you aren’t eating beets you probably should start! I really love the brand “love beets“they come prepackaged and already cooked and peeled #momfriendly. Did I mention they are gluten-free, all-natural and kosher-certified? These are perfect for people who love beets without the fuss! My little gingers love them too.
Once I made this smoothie the little ones and the big one drank it in one sitting, it was a hit. As long as they don’t use the smoothie as a lightsaber!

Add to your Vitamix or blender on high for a couple of minutes, pour in your glass and ENJOY!
