Oh have I got a decadent recipe today! These little treats are perfect for a Monday, lets face it Monday’s really bite the big one. Back to work, back to school, I don’t know about you but I’m never prepared for it and always counting down to the next long weekend.

I found a really cool website a few month’s ago with amazing organization printable section. One of my favourite being a ‘at-a-glance weekly planner ‘these are from hellocuteness.com (click the here) and not only are they really cute but FREE too. They are a Monday must have! For me the more organized I am the more time I have for making food and more importantly eating them.So let’s get to the important part… a sweet ooey gooey basically good for you dessert! We did a family grocery shop this weekend and whenever the little gingers are with me I end up buying extra treats and giving into their demands. This week it was Organic Coconut Bliss Salted Caramel & Chocolate Dairy-free Ice cream, let’s just say I’m glad I gave into those demands.
Who knew dairy-free ice cream could be so delicious? If you are looking for dairy-free you need to
go run and get this today. I decided to get a little bit fancy with the ice cream and make a little sundae type pudding, the outcome was this: Salted Caramel Avocado Chocolate Pudding. Holy yum. I wasn’t sure how the salted caramel sauce would turn out but I was pleasantly surprised and I’ll be making more soon. (Another option for this recipe would be to by a store bought caramel sauce and add a pinch or two of sea salt)
I totally tricked the little gingers and didn’t tell them about the avocado pudding, score another one for me. Even though these aren’t completely guilt-free, with the addition of the avocados we added we are all getting a dose of nearly 20 vitamins and minerals. So what’s so good about avocados? Well they’ve got potassium (which helps control blood pressure), lutein (which is good for your eyes), and folate (which is crucial for cell repair and during pregnancy) Source:WebMD

//Salted Caramel Chocolate Avocado Pudding//
Approximately: 4 mini puddings
Time to Prepare: 20 min
4 TBSP almond milk (or milk of choice)
2 ripe avocados
1/3 raw cacao (3/4 of regular cocoa)
1/3 Cup maple syrup
1 large spoon full of nut butter (I used almond)
Blend all together.
Salted Caramel Sauce (adapted from Made with Love)
3 TBSP of arrowroot powder
1 cup coconut vanilla creamer
3/4 cup of coconut sugar
1/2 cup brown rice syrup
1 TBSP of vanilla extract
- Add the arrowroot powder with 3 tablespoons of the coconut vanilla creamer.
- In a small saucepan whisk together the creamer, coconut sugar,rice syrup and arrowroot mixture, over medium heat.
- Remove from the heat and add vanilla and whatever amount of sea salt that you like, I was good with 1/2 a teaspoon.
- Allow the caramel sauce too cool, I added mine to the fridge for a few minutes.
Now add the caramel sauce to the cup and a layer of avocado then add the ice cream and another layer of caramel. Top with sea salt!
