I may say this in every post but life with little one’s get’s cray cray often, a week turns into a big messy blur fast. Sometimes I catch a glimpse of myself in the mirror on a Friday night and I stare off and think…What the bleep happened?!? The last thing I remember it was Monday morning and I was making a to do list. Its now the end of the week and I’m scrambling to get the kids to bed so I can grab a glass of wine, a brownie and get my roots sweat pants on ASAP before the night is over. I’m going to scare the people reading this that don’t have kids, but this is the truth life becomes a hot mess of love, cuddles, snot, laughter, and excitement faster than you can say “you are going to make such a great parent”.
Yes, Life is banana’s. So what do you do when life gives you bananas? You make Frosty Fudgy Banana Bites! That’s the saying, right? Well it is in this house.
As a mom you have to have quick and easy recipes and meal tricks to use when the worst happens. i.e NO DESSERT, mom illness, kid illness, forgot to go grocery shopping, burnt the dinner, dad made
slop dinner etc. One of my favourite tricks is to pack the kids up in the car for a “Out Of This World Car Picnic”a.k.a go through the drive through and get fast food. Another great idea when you have a little more time and energy is to get them involved in the kitchen. This recipe for frosty fudgy banana bites is perfect for just that. Although I’ve got the recipe below, you can get really creative with these and do your own thing. You can use nut butters like peanut or cashew, Nutella or add a healthy sprinkle of hemp hearts, chia seeds or sunflower seeds. Basically get your creative chef hat on and go banana’s!!
I chose to use Almond Butter it’s great because like many other nut butters it contains a fair amount of protein in a small serving size. Great for keeping everyone full and happy! Of course the main ingredient is banana’s it may come as a surprise that bananas are an amazing source of vitamin B-6, since B vitamins are usually found in animal products it’s a great option for people on a meatless or vegan diet. One lovely banana has 35 percent of your daily B-6 requirement!
After I make these treats I always store these in the freezer , they make a great cool down after school snack and after dinner before dessert snack ;). I’d love to know what your favourite ‘make quick’ snacks are for when life gets nuts and you really don’t have the time for chef inspired dishes or snacks. What are your go-to treats, snacks??
