It may be late but the warm weather is finally here. I’ve been slacking on the blog front but it’s because I’ve been waiting so dang long for the weather to change. Out with the hot cocoa and in with the delicious smoothies. I’m not one of those Canadians who loves the winter, I really really dislike it and I count down the days till I can drink pina coladas on the patio while soaking up as much vitamin D as possible. As much as I’d love to drink those pina coladas all day and lounge with my feet up I’ve got two little gingers that bring me back to reality pretty quick. (sitting? whats that?) my kids aren’t those kids that keep themselves busy doing ‘quiet’ activities they are FULL ON so being a tipsy momma wouldn’t really work. Smoothies that taste like cocktails… that will do!
Anyway, I came up with a really simple smoothie that is almost like the real thing it should be called the ‘faux colada’ . The great thing is the kids will love it and if you really want to you could add a shot of rum for a mamma friendly treat because we all know #momminainteasy
Of course I’ve made this Iced Coconut Colada Smoothie dairy-free, gluten-free, vegan and nutritious it’ll keep those kids hydrated and healthy. So what’s in it? Coconut milk, chia seeds, banana, dates,vanilla and pineapple. Pineapples are awesome, a great hot weather fruit free of both cholesterol and fat. One cup of pineapple contains 80 calories, 2 grams of fibre and 1 gram of protein. It’s also a great vitamin rich power house and contains 40 percent of the daily value for vitamin C, 8 percent of your vitamin B-6 requirement, 6 percent of the daily value for magnesium, and 4 percent of the recommendations for riboflavin, folate, niacin and iron. I always try and add extra health goodies to my smoothie recipes and with this one I chose Chia seeds, mine have a mix of white and black seeds.
I’ve talked about my love of chia seeds before they are fibre-rich and contain protein which is a great addition to a vegetarian or vegan diet. This recipe is easily doubled or tripled and is so versatile, need a quick breakfast? Blend a Iced Coconut Colada Smoothie. Need an afternoon snack? Handful of almonds and an Iced Coconut Colada Smoothie should do the trick. Need a after dinner treat but no dessert on the menu? Iced Coconut Colada Smoothie with a shot of rum or malibu… you get the idea. By the way if you are adding alcohol don’t give it to the kids, you’ll never get them to bed.
It’s so simple to make just add these ingredients to your blender, I use my BFF the Vitamix.
